(Our Play on Chorizo Croquetas)
Ingredients: 100g Chorizo (minced), 500ml Whole milk, 50g Butter, 50g Flour, 1 tsp Nutmeg, 1 tsp Black pepper, 2 Eggs, 100g Panko breadcrumbs...

- 500ml Whole milk
- 50g Butter
- 50g Flour
- 1 tsp Nutmeg
- 1 tsp Black pepper
- 2 Eggs
- 100g Panko breadcrumbs
Cooking Method
- The Architect Fry minced chorizo in butter until the fat renders; stir in flour.
- The Bloom Add spices with a 20ml splash of milk; the heat will swell the nutmeg oils.
- The Silk Merge Gradually whisk in milk until a thick, tacky dough forms. Chill for 4 hours.
- The Coat Form into small cylinders; roll in egg then breadcrumbs.
- The Scorch Deep fry until dark golden and the centers are molten.
