- 4 Poblano peppers (charred, peeled, and sliced)
- 1 Large white onion (petals)
- 1 clove Garlic

- 150ml Double cream
- 100g Monterey Jack or Feta
Cooking Method
- The Scorch Fry onion petals in 1 tbsp butter until charred and sweet; add the pepper strips.
- The Bloom Add garlic and spices with a 20ml splash of water; the steam will release the roasted pepper oils.
- The Marriage Pour in the cream; simmer for 3 minutes until it thickens into a heavy silk.
- The Silk Merge Add the cheese; stir once until it forms molten ribbons through the veg.
- The Final Flourish Finish with a dusting of raw chili flakes and fresh coriander.
