THE FIRE-STUNG CHEESE ORBS

Ingredients: 500g Beef and Pork mince mix, 100g Smoked Cheese (cubed small), 50g Bacon (minced), 1 tbsp Chili flakes, 1 tsp Smoked paprika, 1 tsp Salt, 2 cloves Garlic (pureed), 2 tbsp Sparkling water...

Ingredients

  • 500g Beef and Pork mince mix
  • 100g Smoked Cheese (cubed small)
  • 50g Bacon (minced)
  • 1 tbsp Chili flakes
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 2 cloves Garlic (pureed)
  • 2 tbsp Sparkling water

Cooking Method

  1. The Build Knead meat, bacon, and spices until tacky; add the garlic puree.
  2. The Bloom Slowly fold in the sparkling water; the bubbles will carry the smoke oils through the architecture.
  3. The Marriage Fold in the cheese cubes; shape into small, rough spheres.
  4. The Scorch Fry in oil on maximum heat until the exterior is blackened and charred and the cheese is molten.
  5. The Final Flourish Serve with raw Kajmak or sour cream and fresh raw spring onions.
