THE FIRE-STUNG CHEESE ORBS
(Our Play on Serbian Uštipci / Meat Fritters)
Ingredients: 500g Beef and Pork mince mix, 100g Smoked Cheese (cubed small), 50g Bacon (minced), 1 tbsp Chili flakes, 1 tsp Smoked paprika, 1 tsp Salt, 2 cloves Garlic (pureed), 2 tbsp Sparkling water...
Ingredients
- 500g Beef and Pork mince mix
- 100g Smoked Cheese (cubed small)
- 50g Bacon (minced)
- 1 tbsp Chili flakes
- 1 tsp Smoked paprika
- 1 tsp Salt
- 2 cloves Garlic (pureed)
- 2 tbsp Sparkling water
Cooking Method
- The Build Knead meat, bacon, and spices until tacky; add the garlic puree.
- The Bloom Slowly fold in the sparkling water; the bubbles will carry the smoke oils through the architecture.
- The Marriage Fold in the cheese cubes; shape into small, rough spheres.
- The Scorch Fry in oil on maximum heat until the exterior is blackened and charred and the cheese is molten.
- The Final Flourish Serve with raw Kajmak or sour cream and fresh raw spring onions.
