- 200g Graviera or Kefalotyri cheese (2cm slab)
- 30g Flour
- 1 tsp Chili flakes
- 50g Butter
- 50ml Ouzo or Brandy
- 1 Lemon (juiced)
- Fresh Oregano
Cooking Method
- The Coat Dip the cheese slab in water, then dredge in flour mixed with chili flakes.
- The Scorch Fry in butter on high heat until the exterior is a rock-hard charred gold.
- The Bloom Add the Ouzo to the pan; carefully ignite. The flames will release the aniseed and chili oils into the crust.
- The Marriage Extinguish with lemon juice; the liquid will form a thick, spicy citrus silk.
- The Final Flourish Top with raw fresh oregano and serve screaming hot.
