THE FIRE-STUNG BELLS
(Our Play on Chouriço & Roasted Peppers)

- 200g Chouriço (thick slices)
- 3 Red and Yellow Peppers (sliced thin)
- 1 tsp Smoked paprika
- 1 tsp Chili flakes
- 1 tbsp Wine vinegar
- 2 tbsp Olive oil
- 1 tsp Sugar
Cooking Method
- The Scorch Fry chouriço until blackened and crispy; remove. Sauté peppers in the red fat until charred at the edges.
- The Bloom Add paprika, chili, and sugar with a tiny 15ml splash of vinegar; the reaction will release the smoky oils.
- The Marriage Return sausage; toss for 2 minutes until the liquid evaporates into a thick red lacquer.
- The Final Flourish Top with a massive hit of raw fresh coriander and sea salt.
