THE FIRE-STRAND SCORCH
(Our Play on Crispy Chili Beef)
Ingredients: 400g Beef steak (shredded into thin strands), 4 tbsp Cornflour, 1 tsp Chili powder, 2 tbsp Sweet chili sauce, 1 tbsp Soy sauce, 1 tbsp Vinegar, 1 Carrot (matchsticks), 1 Red pepper (strips)...
Ingredients
- 400g Beef steak (shredded into thin strands)
- 4 tbsp Cornflour
- 1 tsp Chili powder
- 2 tbsp Sweet chili sauce
- 1 tbsp Soy sauce
- 1 tbsp Vinegar
- 1 Carrot (matchsticks)
- 1 Red pepper (strips)
Cooking Method
- The Coat Toss beef strands in cornflour and chili powder until fully dry and separated.
- The Scorch Flash-fry beef in hot oil in batches until dark brown and very crunchy; remove.
- The Architect Sauté carrot and pepper in the same pan on high heat until charred.
- The Bloom Add the fire glaze with a 20ml splash of water; boil until it turns into a thick red syrup.
- The Marriage Toss the crispy beef strands into the syrup until every piece is lacquered.
- The Final Flourish Garnish with fresh coriander and toasted sesame seeds.
