Ingredients: 500g Chicken thighs (tiny 1cm cubes), 20 Dried red chilies (halved), 1 tbsp Szechuan peppercorns, 1 tbsp Ginger-garlic paste, 1 tbsp Soy sauce, Black sesame seeds, Toasted peanuts...

Ingredients

  • 500g Chicken thighs (tiny 1cm cubes)
  • 20 Dried red chilies (halved)
  • 1 tbsp Szechuan peppercorns
  • 1 tbsp Ginger-garlic paste
  • 1 tbsp Soy sauce
  • Black sesame seeds
  • Toasted peanuts

Cooking Method

  1. The Scorch Deep fry chicken cubes until dark golden and very dry; remove.
  2. The Architect In a fresh pan, fry ginger-garlic and a mountain of chilies until the air smells spicy.
  3. The Bloom Add the soy and a tiny 15ml splash of water; toss the chicken back in instantly.
  4. The Marriage Stir-fry until the chicken is crusted in the fire and the pan is bone-dry.
  5. The Finish Garnish with a massive hit of peanuts and sesame seeds.
