THE FIRE-STORM CLUSTERS
(Our Play on Szechuan Dry-Fried Chicken / Laziji)
Ingredients: 500g Chicken thighs (tiny 1cm cubes), 20 Dried red chilies (halved), 1 tbsp Szechuan peppercorns, 1 tbsp Ginger-garlic paste, 1 tbsp Soy sauce, Black sesame seeds, Toasted peanuts...

- 500g Chicken thighs (tiny 1cm cubes)
- 20 Dried red chilies (halved)
- 1 tbsp Szechuan peppercorns
- 1 tbsp Ginger-garlic paste
- 1 tbsp Soy sauce
- Black sesame seeds
- Toasted peanuts
Cooking Method
- The Scorch Deep fry chicken cubes until dark golden and very dry; remove.
- The Architect In a fresh pan, fry ginger-garlic and a mountain of chilies until the air smells spicy.
- The Bloom Add the soy and a tiny 15ml splash of water; toss the chicken back in instantly.
- The Marriage Stir-fry until the chicken is crusted in the fire and the pan is bone-dry.
- The Finish Garnish with a massive hit of peanuts and sesame seeds.
