THE FIRE-REEF TANGLE
(Our Play on Spanish Spicy Squid Pasta)

- 400g Squid (rings and tentacles)
- 1 tbsp Smoked paprika
- 4 cloves Garlic (minced)
- 200g Tomato passata
- 1 tbsp Sherry vinegar
- 1 tsp Dried Oregano
- 1 tsp Black pepper
Cooking Method
- The Scorch High-heat stir-fry squid in oil for 90 seconds until charred and curled; remove.
- The Architect In the same pan, sauté garlic until golden brown.
- The Bloom Add paprika, oregano, and pepper with a 30ml splash of water to form a dark fire-paste.
- The Marriage Add passata and vinegar; toss the squid back in and simmer for 2 minutes.
- The Final Flourish Toss with hot pasta and a massive hit of raw fresh parsley.
