Ingredients: 400g King prawns, 6 Dried red chilies, 50g Roasted peanuts, 2 tbsp Soy sauce, 1 tbsp Black vinegar, 1 tsp Sugar, 1 Red pepper (petals), 2 Spring onions (batons)...

Ingredients

  • 400g King prawns
  • 6 Dried red chilies
  • 50g Roasted peanuts
  • 2 tbsp Soy sauce
  • 1 tbsp Black vinegar
  • 1 tsp Sugar
  • 1 Red pepper (petals)
  • 2 Spring onions (batons)

Cooking Method

  1. The Scorch Flash-fry dried chilies in hot oil until they turn dark and the aroma is sharp.
  2. The Sear Add prawns; stir-fry for 2 minutes until pink. Add peppers and peanuts.
  3. The Bloom Pour in the silk ingredients and a 20ml splash of water to form a dark, glossy glaze.
  4. The Marriage Toss vigorously for 1 minute until the sauce is a thick lacquer.
  5. The Finish Garnish with fresh spring onion batons.
