- 400g King prawns
- 6 Dried red chilies
- 50g Roasted peanuts
- 2 tbsp Soy sauce
- 1 tbsp Black vinegar
- 1 tsp Sugar
- 1 Red pepper (petals)
- 2 Spring onions (batons)
Cooking Method
- The Scorch Flash-fry dried chilies in hot oil until they turn dark and the aroma is sharp.
- The Sear Add prawns; stir-fry for 2 minutes until pink. Add peppers and peanuts.
- The Bloom Pour in the silk ingredients and a 20ml splash of water to form a dark, glossy glaze.
- The Marriage Toss vigorously for 1 minute until the sauce is a thick lacquer.
- The Finish Garnish with fresh spring onion batons.
