THE FIRE-NUT COTTAGE
(Our Play on Chinese Kung Pao Tofu)
Ingredients: 400g Extra-firm Tofu (cubed), 6 Dried red chilies, 50g Peanuts (roasted), 2 tbsp Soy sauce, 1 tbsp Vinegar, 1 tbsp Honey, 1 Green pepper (petals), 1 Red onion (petals)...

- 400g Extra-firm Tofu (cubed)
- 6 Dried red chilies
- 50g Peanuts (roasted)
- 2 tbsp Soy sauce
- 1 tbsp Vinegar
- 1 tbsp Honey
- 1 Green pepper (petals)
- 1 Red onion (petals)
Cooking Method
- The Scorch Fry tofu in oil until crispy; set aside. Fry dried chilies until they turn dark.
- The Architect Sauté onions and peppers on high heat until charred at the edges.
- The Bloom Add the silk ingredients and peanuts with a 30ml splash of water to form a dark lacquer.
- The Marriage Toss the tofu into the sauce until every cube is sticky and red.
- The Final Flourish Garnish with fresh spring onion matchsticks.
