- 1 Cantaloupe Melon (wedges)
- 100g Presunto or Prosciutto
- 1 tsp Piri-Piri flakes
- 0.5 tsp Black pepper
- 50ml Olive oil
- 1 tbsp Honey
- 1 tsp Wine vinegar
Cooking Method
- The Bloom Heat oil in a small pan; add piri-piri and honey with a tiny 5ml splash of vinegar; the reaction will release the spice oils.
- The Assembly Wrap each melon wedge in a slice of presunto.
- The Marriage Drizzle the hot spicy honey-silk over the cold fruit and ham.
- The Final Flourish Top with raw fresh mint matchsticks and a final dust of raw black pepper.
