Ingredients: 1 Cantaloupe Melon (wedges), 100g Presunto or Prosciutto, 1 tsp Piri-Piri flakes, 0.5 tsp Black pepper, 50ml Olive oil, 1 tbsp Honey, 1 tsp Wine vinegar...

Ingredients

  • 1 Cantaloupe Melon (wedges)
  • 100g Presunto or Prosciutto
  • 1 tsp Piri-Piri flakes
  • 0.5 tsp Black pepper
  • 50ml Olive oil
  • 1 tbsp Honey
  • 1 tsp Wine vinegar

Cooking Method

  1. The Bloom Heat oil in a small pan; add piri-piri and honey with a tiny 5ml splash of vinegar; the reaction will release the spice oils.
  2. The Assembly Wrap each melon wedge in a slice of presunto.
  3. The Marriage Drizzle the hot spicy honey-silk over the cold fruit and ham.
  4. The Final Flourish Top with raw fresh mint matchsticks and a final dust of raw black pepper.
