THE FIRE-GLAZED RIBS
(Our Play on Chinese BBQ Spare Ribs - Shortcut)

Ingredients
- 600g Pork spare ribs (individual)
- 3 tbsp Hoisin sauce
- 1 tbsp Honey
- 1 tbsp Soy sauce
- 1 tsp Five-spice powder
- 1 tbsp Ginger paste
Cooking Method
- The Par-Boil Boil ribs in water for 15 minutes to tenderize; drain and dry.
- The Coat Whisk glaze ingredients; brush heavily over the ribs.
- The Bloom Add a tiny 20ml splash of water to the remaining glaze to keep it fluid.
- The Scorch Grill at 200°C for 20 minutes, brushing with extra glaze every 5 minutes until blackened and sticky.
- The Final Flourish Finish with fresh chili slices and sesame seeds.
