THE FIRE-GLAZED RIBS

Ingredients: 600g Pork spare ribs (individual), 3 tbsp Hoisin sauce, 1 tbsp Honey, 1 tbsp Soy sauce, 1 tsp Five-spice powder, 1 tbsp Ginger paste...

Ingredients

  • 600g Pork spare ribs (individual)
  • 3 tbsp Hoisin sauce
  • 1 tbsp Honey
  • 1 tbsp Soy sauce
  • 1 tsp Five-spice powder
  • 1 tbsp Ginger paste

Cooking Method

  1. The Par-Boil Boil ribs in water for 15 minutes to tenderize; drain and dry.
  2. The Coat Whisk glaze ingredients; brush heavily over the ribs.
  3. The Bloom Add a tiny 20ml splash of water to the remaining glaze to keep it fluid.
  4. The Scorch Grill at 200°C for 20 minutes, brushing with extra glaze every 5 minutes until blackened and sticky.
  5. The Final Flourish Finish with fresh chili slices and sesame seeds.
