THE FIRE-CRACKER PRAWNS
(Our Play on Kung Pao Shrimp)
Ingredients: 300g King prawns, 6 Dried red chilies, 30g Peanuts (roasted), 1 tbsp Vinegar, 1 tbsp Soy sauce, 1 tsp Sugar, 3 Spring onions (cut into 2cm batons)...
Ingredients
- 300g King prawns
- 6 Dried red chilies
- 30g Peanuts (roasted)
- 1 tbsp Vinegar
- 1 tbsp Soy sauce
- 1 tsp Sugar
- 3 Spring onions (cut into 2cm batons)
Cooking Method
- The Scorch Fry dried chilies in hot oil until they turn dark; add prawns and peanuts.
- The Sear Stir-fry for 3 minutes until prawns turn pink.
- The Bloom Add the glaze ingredients and a splash of water; toss until the sauce is thick and glossy.
- The Finish Toss in the spring onion batons for the final 30 seconds.
