THE FIRE-CHARRED BREAKFAST
(Our Play on Mexican Skillet Potatoes)

Ingredients
- 500g Potatoes (cubed)
- 1 tsp Cumin
- 1 tsp Smoked paprika
- 1 tsp Chili powder
- 1 small onion (diced)
- 1 Bell pepper (diced)
- 2 tbsp Butter
- 1 tbsp Olive oil
Cooking Method
- The Scorch Fry potatoes in oil and butter until they are 70% cooked and charred at the edges.
- The Architect Add onions and peppers; sauté in the butter fat until soft.
- The Bloom Add spices with a 20ml splash of water; the steam will finish the spuds and bloom the paprika.
- The Marriage Toss on high heat for 3 minutes until the liquid vanishes and the spuds are rock-hard crispy.
- The Final Flourish Finish with a squeeze of fresh lime and raw spring onions.
