THE FIRE-CHARRED BELLS
(Our Play on Chouriço and Peppers)

- 200g Chouriço (sliced)
- 2 Red bell peppers (strips)
- 1 Onion (petals)
- 1 tsp Smoked paprika
- 1 tsp Chili flakes
- 1 tbsp Wine vinegar
- 2 tbsp Olive oil
Cooking Method
- The Scorch Fry chouriço until the fat renders; remove. In the same fat, fry onions and peppers on max heat until charred.
- The Bloom Add paprika and chili with a tiny 15ml splash of vinegar; the sudden steam will release the smoky oils.
- The Marriage Return sausage; toss for 2 minutes until the liquid evaporates and the spice grips the veg.
- The Final Flourish Top with raw fresh coriander and a dusting of sea salt.
