Ingredients: 200g Chouriço (sliced), 2 Red bell peppers (strips), 1 Onion (petals), 1 tsp Smoked paprika, 1 tsp Chili flakes, 1 tbsp Wine vinegar, 2 tbsp Olive oil...

Ingredients

  • 200g Chouriço (sliced)
  • 2 Red bell peppers (strips)
  • 1 Onion (petals)
  • 1 tsp Smoked paprika
  • 1 tsp Chili flakes
  • 1 tbsp Wine vinegar
  • 2 tbsp Olive oil

Cooking Method

  1. The Scorch Fry chouriço until the fat renders; remove. In the same fat, fry onions and peppers on max heat until charred.
  2. The Bloom Add paprika and chili with a tiny 15ml splash of vinegar; the sudden steam will release the smoky oils.
  3. The Marriage Return sausage; toss for 2 minutes until the liquid evaporates and the spice grips the veg.
  4. The Final Flourish Top with raw fresh coriander and a dusting of sea salt.
