THE FETA-STUNG LAMB SLABS
(Our Play on Greek-Balkan Lamb Burgers)

- 100g Feta (cubed small)
- 1 Red onion (pureed)
- 2 cloves Garlic
- 1 tbsp Dried Oregano
- 1 tsp Black pepper
- 1 tsp Cumin
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
Cooking Method
- The Build Knead lamb, onion puree, garlic, and dry spices until tacky.
- The Bloom Add a tiny 10ml splash of warm water to the meat mix; the moisture will wake the oregano and cumin oils.
- The Marriage Fold in the feta cubes gently. Shape into thick slabs.
- The Scorch Grill on white-hot heat for 4 minutes per side until the exterior is blackened and the cheese is soft.
- The Final Flourish Serve with raw cucumber ribbons and a hit of raw lemon juice.
