THE FETA-STUNG GREENS
(Our Play on Spanikopita Filling)

Ingredients
- 500g Spinach (fresh, minced)
- 1 bunch Spring onions (minced)
- 300g Feta (crumbled)
- 2 Eggs
- 50ml Olive oil
- 1 tsp Black pepper
- 1 tsp Salt
- 0.5 tsp Nutmeg
Cooking Method
- The Wilt Sauté spring onions in oil until soft; add spinach for 2 minutes then squeeze bone-dry.
- The Bloom Whisk eggs with the spices and a tiny 10ml splash of lemon juice to release the aromatics.
- The Marriage Combine the dry greens, cheese, and spiced egg silk into a uniform paste.
- The Final Flourish Use as a filling for raw phyllo pastry; top with raw fresh dill.
