THE FERMENTED PORK-GRAINS
(Our Play on Kimchi Fried Rice with Pork)

Ingredients
- 300g Jasmine rice (cold)
- 150g Kimchi (chopped)
- 1 tbsp Gochujang
- 150g Pork belly (diced)
- 1 tbsp Sesame oil
- 1 tbsp Soy sauce
Cooking Method
- The Scorch Fry pork belly until the fat renders and the meat is crispy; remove half.
- The Bloom Add kimchi and gochujang to the fat with a 25ml splash of water; fry until red oil rises.
- The Marriage Add cold rice; stir-fry on max heat for 4 minutes until every grain is stained red.
- The Finish Drizzle with sesame oil and top with the reserved pork and a fried egg.
