THE EMERALD RICE-SILK
(Our Play on Greek Spanakorizo)
Ingredients: 500g Fresh Spinach (chopped), 200g Long-grain rice, 1 Red onion (minced), 2 cloves Garlic, 1 bunch Spring onions, 1 tsp Black pepper, 1 tsp Salt, 1 tsp Dried Dill, 500ml Veg stock, 100ml Extra virgin olive oil...
Ingredients
- 500g Fresh Spinach (chopped)
- 200g Long-grain rice
- 1 Red onion (minced)
- 2 cloves Garlic
- 1 bunch Spring onions
- 1 tsp Black pepper
- 1 tsp Salt
- 1 tsp Dried Dill
- 500ml Veg stock
- 100ml Extra virgin olive oil
- 1 Lemon (juiced)
Cooking Method
- The Architect Sauté onion, garlic, and spring onions in half the oil until sweet.
- The Bloom Add spices and rice; toast for 1 minute with a 30ml splash of stock to release the oils.
- The Swell Add remaining stock; simmer covered for 10 minutes.
- The Marriage Toss in the spinach; simmer for 5 minutes until it wilts into an emerald silk that coats the grains.
- The Final Flourish Stir in lemon juice and remaining raw olive oil; top with raw Feta.
