Ingredients: 500g Fresh Spinach (chopped), 200g Long-grain rice, 1 Red onion (minced), 2 cloves Garlic, 1 bunch Spring onions, 1 tsp Black pepper, 1 tsp Salt, 1 tsp Dried Dill, 500ml Veg stock, 100ml Extra virgin olive oil...

Ingredients

  • 500g Fresh Spinach (chopped)
  • 200g Long-grain rice
  • 1 Red onion (minced)
  • 2 cloves Garlic
  • 1 bunch Spring onions
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 1 tsp Dried Dill
  • 500ml Veg stock
  • 100ml Extra virgin olive oil
  • 1 Lemon (juiced)

Cooking Method

  1. The Architect Sauté onion, garlic, and spring onions in half the oil until sweet.
  2. The Bloom Add spices and rice; toast for 1 minute with a 30ml splash of stock to release the oils.
  3. The Swell Add remaining stock; simmer covered for 10 minutes.
  4. The Marriage Toss in the spinach; simmer for 5 minutes until it wilts into an emerald silk that coats the grains.
  5. The Final Flourish Stir in lemon juice and remaining raw olive oil; top with raw Feta.
