Ingredients: 400g Salt Cod (soaked, chunks), 400g Turnip Greens or Kale (shredded), 6 cloves Garlic (sliced), 100ml Olive oil, 1 tsp White pepper, 1 tsp Smoked paprika...

Ingredients

  • 400g Salt Cod (soaked, chunks)
  • 400g Turnip Greens or Kale (shredded)
  • 6 cloves Garlic (sliced)
  • 100ml Olive oil
  • 1 tsp White pepper
  • 1 tsp Smoked paprika

Cooking Method

  1. The Boil Blanch greens and cod chunks in the same pot of water for 5 minutes; drain.
  2. The Architect In a wide pan, heat oil and sauté garlic until golden and fragrant.
  3. The Bloom Add white pepper and paprika with a tiny 15ml splash of water; the hiss will release the smoky aromatics.
  4. The Marriage Toss the cod and greens through the garlic oil for 3 minutes until charred at the edges.
  5. The Final Flourish Finish with a massive hit of raw extra virgin olive oil and coarse salt.
