Ingredients
- 400g Salt Cod (soaked, chunks)
- 400g Turnip Greens or Kale (shredded)
- 6 cloves Garlic (sliced)
- 100ml Olive oil
- 1 tsp White pepper
- 1 tsp Smoked paprika
Cooking Method
- The Boil Blanch greens and cod chunks in the same pot of water for 5 minutes; drain.
- The Architect In a wide pan, heat oil and sauté garlic until golden and fragrant.
- The Bloom Add white pepper and paprika with a tiny 15ml splash of water; the hiss will release the smoky aromatics.
- The Marriage Toss the cod and greens through the garlic oil for 3 minutes until charred at the edges.
- The Final Flourish Finish with a massive hit of raw extra virgin olive oil and coarse salt.
