Ingredients: 300g French Green beans (chopped 1cm), 6 Eggs (whisked), 1 tsp White pepper, 1 tsp Garlic powder, 1 tsp Salt, 50ml Milk, 50g Butter...

Ingredients

  • 300g French Green beans (chopped 1cm)
  • 6 Eggs (whisked)
  • 1 tsp White pepper
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 50ml Milk
  • 50g Butter

Cooking Method

  1. The Boil Blanch beans for 3 minutes; drain and shock.
  2. The Bloom Whisk milk and spices into the eggs; add a tiny 5ml splash of warm water to help the pepper bloom.
  3. The Scorch Melt butter in a wide pan; add beans and sauté until charred.
  4. The Marriage Pour in the spiced egg silk; cook on low heat for 5 minutes without stirring.
  5. The Char Place under a hot grill for 3 minutes until the top is a charred, puffed gold.
  6. The Final Flourish Top with raw fresh parsley and extra white pepper.
