  • 3 Large Zucchini (grated and squeezed bone-dry)
  • 100g Feta (crumbled)
  • 1 bunch Spring onions (minced)
  • 1 tsp Dried Mint
  • 1 tsp Garlic powder
  • 1 tsp Black pepper
  • 2 Eggs
  • 100g Flour

Cooking Method

  1. The Build Mix zucchini, onions, and cheese in a bowl.
  2. The Bloom Whisk eggs with the spices and a tiny 10ml splash of water to bloom the mint oils; fold into the zucchini with the flour.
  3. The Scorch Drop spoonfuls into hot oil; fry on maximum heat until every edge is charred and golden.
  4. The Final Flourish Serve with raw lemon wedges and cold yogurt.
