- 3 Large Zucchini (grated and squeezed bone-dry)
- 100g Feta (crumbled)
- 1 bunch Spring onions (minced)
- 1 tsp Dried Mint
- 1 tsp Garlic powder
- 1 tsp Black pepper
- 2 Eggs
- 100g Flour
Cooking Method
- The Build Mix zucchini, onions, and cheese in a bowl.
- The Bloom Whisk eggs with the spices and a tiny 10ml splash of water to bloom the mint oils; fold into the zucchini with the flour.
- The Scorch Drop spoonfuls into hot oil; fry on maximum heat until every edge is charred and golden.
- The Final Flourish Serve with raw lemon wedges and cold yogurt.
