THE EMERALD DILL-SILK
(Our Play on Bulgarian Zucchini Stew)
Ingredients: 3 Large Zucchini (cubed), 1 Red onion (minced), 3 cloves Garlic, 50g Butter, 1 tbsp Fresh Dill (minced), 1 tsp White pepper, 1 tsp Salt, 100ml Sour cream, 1 tbsp Flour, 100ml Chicken stock...
Ingredients
- 3 Large Zucchini (cubed)
- 1 Red onion (minced)
- 3 cloves Garlic
- 50g Butter
- 1 tbsp Fresh Dill (minced)
- 1 tsp White pepper
- 1 tsp Salt
- 100ml Sour cream
- 1 tbsp Flour
- 100ml Chicken stock
Cooking Method
- The Architect Sauté onion and garlic in butter until sweet; add zucchini.
- The Bloom Add spices and half the dill with a 20ml splash of stock; the heat will release the herbal oils.
- The Swell Add remaining stock; simmer covered for 10 minutes until zucchini is soft.
- The Silk Merge Whisk flour into sour cream; stir into the pan off the heat until it forms a thick emerald silk.
- The Final Flourish Top with the remaining raw fresh dill and extra raw black pepper.
