- 500g Chicken breast (chunks)
- 400g Spinach (blanched and pureed)
- 1 large onion (diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Garam masala
- 1 tsp Chili powder
Cooking Method
- The Architect Fry onions until golden; add ginger-garlic and stir-fry for 1 minute.
- The Bloom Add dry spices and a 30ml splash of water to form a thick masala.
- The Sear Add chicken; fry for 5 minutes until sealed.
- The Marriage Fold in the spinach puree; simmer for 10 minutes until dark and rich.
- The Finish Garnish with fresh ginger matchsticks for a sharp hit.
