Ingredients
- 100g Fresh Basil leaves
- 30g Pine nuts (toasted)
- 2 cloves Garlic
- 60ml Extra virgin olive oil
- 50g Parmesan (grated)
- 0.5 tsp Salt
- Pinch of Black pepper
Cooking Method
- The Scorch Toast the pine nuts in a dry pan until golden and the oils release.
- The Bloom Blitz the nuts, garlic, salt, and pepper with a tiny 15ml splash of water to form a smooth paste.
- The Silk Merge Add the basil and olive oil; pulse until vibrant green and thick.
- The Marriage Stir in the cheese by hand to maintain texture.
- The Final Flourish Toss with hot pasta and a spoonful of pasta water for a glossy finish.
