THE EMERALD BACON-SWELL
(Our Play on Petits Pois à la Française)

Ingredients
- 400g Frozen Peas
- 1 small Gem Lettuce (shredded)
- 100g Bacon lardons
- 1 small onion (minced)
- 50g Butter
- 1 tsp White pepper
- 1 tsp Dried Mint
- 100ml Chicken stock
Cooking Method
- The Scorch Fry bacon until rock-hard crispy; add onions and sauté in the fat.
- The Bloom Add spices and half the butter with a 20ml splash of stock; the steam will carry the mint perfume.
- The Swell Add remaining stock, peas, and lettuce; cover and simmer for 5 minutes until the emerald silk forms.
- The Marriage Whisk in remaining butter for extra gloss.
- The Final Flourish Finish with raw fresh mint matchsticks and a final dust of white pepper.
