Ingredients: 400g Frozen Peas, 1 small Gem Lettuce (shredded), 100g Bacon lardons, 1 small onion (minced), 50g Butter, 1 tsp White pepper, 1 tsp Dried Mint, 100ml Chicken stock...

Ingredients

  • 400g Frozen Peas
  • 1 small Gem Lettuce (shredded)
  • 100g Bacon lardons
  • 1 small onion (minced)
  • 50g Butter
  • 1 tsp White pepper
  • 1 tsp Dried Mint
  • 100ml Chicken stock

Cooking Method

  1. The Scorch Fry bacon until rock-hard crispy; add onions and sauté in the fat.
  2. The Bloom Add spices and half the butter with a 20ml splash of stock; the steam will carry the mint perfume.
  3. The Swell Add remaining stock, peas, and lettuce; cover and simmer for 5 minutes until the emerald silk forms.
  4. The Marriage Whisk in remaining butter for extra gloss.
  5. The Final Flourish Finish with raw fresh mint matchsticks and a final dust of white pepper.
