  • 200g Egg Tagliatelle
  • 100ml Double cream
  • 50g Butter
  • 1 tbsp Black peppercorns (toasted and crushed)
  • 1 tsp Garlic powder
  • 2 tsp Truffle oil (or paste)
  • 30g Parmesan

Cooking Method

  1. The Scorch Dry-toast the peppercorns until the aroma is sharp; add the butter.
  2. The Bloom Add garlic powder and a 20ml splash of pasta water to release the perfume.
  3. The Silk Merge Pour in the cream; simmer for 2 minutes until it reduces to a thick velvet silk.
  4. The Marriage Toss the pasta through the cream; stir in the parmesan until melted.
  5. The Final Flourish Add the truffle oil off the heat for a raw, intense hit.
