- 800g Chickpeas (canned/rinsed)
- 1 Large onion (pureed)
- 2 cloves Garlic
- 50g Butter
- 1 tsp Cumin seeds
- 1 tsp Black pepper
- 1L Chicken stock
- 50ml Extra virgin olive oil
Cooking Method
- The Architect Fry onion puree and garlic in butter until sweet and golden.
- The Bloom Add cumin and pepper with a 30ml splash of stock; the heat will release the earthy aromatics.
- The Swell Add chickpeas and remaining stock; simmer for 15 minutes.
- The Silk Merge Blitz until it forms a smooth, heavy bone-white silk.
- The Final Flourish Top with raw fresh mint and a heavy drizzle of raw extra virgin olive oil.
