THE EARTH-SILK PULSE
(Our Play on Greek Fava / Split Pea Dip)

- 300g Yellow split peas (rinsed)
- 2 Red onions (pureed)
- 2 cloves Garlic
- 1L Water
- 1 tsp Cumin seeds
- 1 tsp Turmeric
- 1 tsp Salt
- 100ml Extra virgin olive oil
- 1 Lemon (juiced)
Cooking Method
- The Swell Boil split peas in water with onion and garlic for 35 minutes until they dissolve.
- The Bloom Heat half the oil in a small pan; add cumin and turmeric with a 15ml splash of water; the sizzle will bloom the oils.
- The Silk Merge Blitz the peas with the spiced oil and lemon juice until it forms a thick, golden earth-silk.
- The Final Flourish Top with raw red onion rings, capers, and a massive drizzle of raw olive oil.
