Ingredients: 300g Yellow split peas (rinsed), 2 Red onions (pureed), 2 cloves Garlic, 1L Water, 1 tsp Cumin seeds, 1 tsp Turmeric, 1 tsp Salt, 100ml Extra virgin olive oil, 1 Lemon (juiced)...

Ingredients

  • 300g Yellow split peas (rinsed)
  • 2 Red onions (pureed)
  • 2 cloves Garlic
  • 1L Water
  • 1 tsp Cumin seeds
  • 1 tsp Turmeric
  • 1 tsp Salt
  • 100ml Extra virgin olive oil
  • 1 Lemon (juiced)

Cooking Method

  1. The Swell Boil split peas in water with onion and garlic for 35 minutes until they dissolve.
  2. The Bloom Heat half the oil in a small pan; add cumin and turmeric with a 15ml splash of water; the sizzle will bloom the oils.
  3. The Silk Merge Blitz the peas with the spiced oil and lemon juice until it forms a thick, golden earth-silk.
  4. The Final Flourish Top with raw red onion rings, capers, and a massive drizzle of raw olive oil.
