- 2 White fish fillets (Snapper or Cod)
- 2 tbsp Achiote paste
- 1 tsp Cumin
- 1 tsp Dried Oregano
- 100ml Orange juice
- 2 tbsp Lime juice
- 1 Red onion (petals)
- 1 Bell pepper (strips)
Cooking Method
- The Coat Whisk achiote, juices, and spices with a 10ml splash of water to form a thick red lacquer; rub onto fish.
- The Rest Let sit for 20 minutes to allow the earthiness of the achiote to penetrate.
- The Scorch Roast at 200°C for 15 minutes with onions and peppers on top until the edges are blackened.
- The Marriage Baste with the tray juices halfway through to keep the fish moist.
- The Final Flourish Top with raw fresh coriander and extra lime zest.
