Ingredients: 2 White fish fillets (Snapper or Cod), 2 tbsp Achiote paste, 1 tsp Cumin, 1 tsp Dried Oregano, 100ml Orange juice, 2 tbsp Lime juice, 1 Red onion (petals), 1 Bell pepper (strips)...

Ingredients

  • 2 White fish fillets (Snapper or Cod)
  • 2 tbsp Achiote paste
  • 1 tsp Cumin
  • 1 tsp Dried Oregano
  • 100ml Orange juice
  • 2 tbsp Lime juice
  • 1 Red onion (petals)
  • 1 Bell pepper (strips)

Cooking Method

  1. The Coat Whisk achiote, juices, and spices with a 10ml splash of water to form a thick red lacquer; rub onto fish.
  2. The Rest Let sit for 20 minutes to allow the earthiness of the achiote to penetrate.
  3. The Scorch Roast at 200°C for 15 minutes with onions and peppers on top until the edges are blackened.
  4. The Marriage Baste with the tray juices halfway through to keep the fish moist.
  5. The Final Flourish Top with raw fresh coriander and extra lime zest.
