THE DRUNKEN PORK SLABS

Ingredients: 400g Chorizo (sliced into 1cm disks), 200ml Red wine, 1 tbsp Honey, 1 tsp Smoked paprika, 2 Bay leaves, 2 cloves Garlic (smashed)...

Ingredients

  • 400g Chorizo (sliced into 1cm disks)
  • 200ml Red wine
  • 1 tbsp Honey
  • 1 tsp Smoked paprika
  • 2 Bay leaves
  • 2 cloves Garlic (smashed)

Cooking Method

  1. The Scorch Fry chorizo disks in a dry pan until the edges are blackened and the red fat renders.
  2. The Architect Add garlic and bay leaves; sauté in the fat until fragrant.
  3. The Bloom Add the paprika and a 20ml splash of the wine; the steam will release the deep smoky perfume.
  4. The Swell Pour in remaining wine and honey; simmer uncovered for 10 minutes until the liquid reduces to a thick purple lacquer.
  5. The Final Flourish Serve hot with charred bread to mop up the drunken silk.
