THE DRUNKEN PORK SLABS
(Our Play on Chorizo al Vino)
Ingredients: 400g Chorizo (sliced into 1cm disks), 200ml Red wine, 1 tbsp Honey, 1 tsp Smoked paprika, 2 Bay leaves, 2 cloves Garlic (smashed)...
Ingredients
- 400g Chorizo (sliced into 1cm disks)
- 200ml Red wine
- 1 tbsp Honey
- 1 tsp Smoked paprika
- 2 Bay leaves
- 2 cloves Garlic (smashed)
Cooking Method
- The Scorch Fry chorizo disks in a dry pan until the edges are blackened and the red fat renders.
- The Architect Add garlic and bay leaves; sauté in the fat until fragrant.
- The Bloom Add the paprika and a 20ml splash of the wine; the steam will release the deep smoky perfume.
- The Swell Pour in remaining wine and honey; simmer uncovered for 10 minutes until the liquid reduces to a thick purple lacquer.
- The Final Flourish Serve hot with charred bread to mop up the drunken silk.
