THE DRUNKEN HEAT-STRANDS
(Our Play on Thai Pad Kee Mao / Drunken Noodles)
Ingredients: 250g Wide flat rice noodles (boiled), 200g Beef or Chicken strips, 4 Red chilies (smashed), 1 tbsp Ginger-garlic paste, 2 tbsp Oyster sauce, 1 tbsp Soy sauce, 1 tsp Dark soy sauce...

- 250g Wide flat rice noodles (boiled)
- 200g Beef or Chicken strips
- 4 Red chilies (smashed)
- 1 tbsp Ginger-garlic paste
- 2 tbsp Oyster sauce
- 1 tbsp Soy sauce
- 1 tsp Dark soy sauce
Cooking Method
- The Scorch Fry meat and aromatics on maximum heat until the meat is charred and chilies smell sharp.
- The Marriage Add the noodles; toss until they are slightly charred and 'smoke' in the pan.
- The Bloom Add the silk sauces with a 20ml splash of water to help the dark soy coat the strands.
- The Finish Toss in a massive handful of fresh basil and serve immediately while steaming.
