THE DRUNKEN HEAT-STRANDS

Ingredients: 250g Wide flat rice noodles (boiled), 200g Beef or Chicken strips, 4 Red chilies (smashed), 1 tbsp Ginger-garlic paste, 2 tbsp Oyster sauce, 1 tbsp Soy sauce, 1 tsp Dark soy sauce...

Ingredients

  • 250g Wide flat rice noodles (boiled)
  • 200g Beef or Chicken strips
  • 4 Red chilies (smashed)
  • 1 tbsp Ginger-garlic paste
  • 2 tbsp Oyster sauce
  • 1 tbsp Soy sauce
  • 1 tsp Dark soy sauce

Cooking Method

  1. The Scorch Fry meat and aromatics on maximum heat until the meat is charred and chilies smell sharp.
  2. The Marriage Add the noodles; toss until they are slightly charred and 'smoke' in the pan.
  3. The Bloom Add the silk sauces with a 20ml splash of water to help the dark soy coat the strands.
  4. The Finish Toss in a massive handful of fresh basil and serve immediately while steaming.
