(Our Play on Chouriço Assado / Flame-Grilled Sausage)
Ingredients: 1 Whole Chouriço sausage, 1 tsp Smoked paprika, 0.5 tsp Chili powder, 100ml Aguardente or Grappa, 1 tbsp Honey...
Ingredients
- 1 Whole Chouriço sausage
- 1 tsp Smoked paprika
- 0.5 tsp Chili powder
- 100ml Aguardente or Grappa
- 1 tbsp Honey
Cooking Method
- The Scorch Score the chouriço in 1cm intervals (do not cut through).
- The Bloom Rub the paprika and chili into the slits with a tiny 5ml splash of water to ensure it sticks.
- The Marriage Place in a clay dish; pour the alcohol over the sausage.
- The Scorch Merge Carefully ignite the spirit; let the flames char the sausage skin until rock-hard and blackened.
- The Final Flourish Drizzle with raw honey and serve with bread.
