Ingredients: 2 Cod or Hake fillets, 200ml Greek Yogurt, 1 Egg yolk, 50g Butter, 1 tbsp Fresh Dill (minced), 1 tsp White pepper, 1 tsp Salt, 2 cloves Garlic (minced)...

Ingredients

  • 2 Cod or Hake fillets
  • 200ml Greek Yogurt
  • 1 Egg yolk
  • 50g Butter
  • 1 tbsp Fresh Dill (minced)
  • 1 tsp White pepper
  • 1 tsp Salt
  • 2 cloves Garlic (minced)

Cooking Method

  1. The Scorch Pan-fry fish in butter for 4 minutes per side until charred and golden; remove.
  2. The Architect Add garlic to the remaining butter; sauté until golden.
  3. The Bloom Whisk half the dill and white pepper with a tiny 15ml splash of lemon juice; the sizzle will bloom the herbs.
  4. The Silk Merge Stir yogurt and egg yolk into the pan on very low heat until a thick ivory silk forms.
  5. The Marriage Drench the fish in the yogurt-silk; do not boil the cream.
  6. The Final Flourish Top with the remaining raw fresh dill and extra lemon zest.
