THE DILL-SILK REEF
(Our Play on Bulgarian White Fish with Yogurt)

Ingredients
- 2 Cod or Hake fillets
- 200ml Greek Yogurt
- 1 Egg yolk
- 50g Butter
- 1 tbsp Fresh Dill (minced)
- 1 tsp White pepper
- 1 tsp Salt
- 2 cloves Garlic (minced)
Cooking Method
- The Scorch Pan-fry fish in butter for 4 minutes per side until charred and golden; remove.
- The Architect Add garlic to the remaining butter; sauté until golden.
- The Bloom Whisk half the dill and white pepper with a tiny 15ml splash of lemon juice; the sizzle will bloom the herbs.
- The Silk Merge Stir yogurt and egg yolk into the pan on very low heat until a thick ivory silk forms.
- The Marriage Drench the fish in the yogurt-silk; do not boil the cream.
- The Final Flourish Top with the remaining raw fresh dill and extra lemon zest.
