THE DARK-STUNG LAMB
(Our Play on Balkan Lamb with Black Coffee & Pepper)

Ingredients
- 800g Lamb shoulder (cubed)
- 1 tbsp Black pepper
- 1 tsp Cardamom
- 2 Red onions (pureed)
- 4 cloves Garlic
- 1 shot Turkish Coffee
- 200ml Lamb stock
- 1 tbsp Honey
Cooking Method
- The Scorch Sear lamb cubes until dark and rock-hard charred; remove.
- The Architect Fry onion puree and garlic until sweet and dark.
- The Bloom Add spices and coffee to the pan; the sudden steam will release the roasted bean oils.
- The Swell Add honey and stock; return meat. Simmer covered for 45 minutes.
- The Marriage Remove lid; boil until the liquid is a thick, black-mahogany silk.
- The Final Flourish Top with raw fresh mint matchsticks and extra pepper.
