Ingredients: 800g Lamb shoulder (cubed), 1 tbsp Black pepper, 1 tsp Cardamom, 2 Red onions (pureed), 4 cloves Garlic, 1 shot Turkish Coffee, 200ml Lamb stock, 1 tbsp Honey...

Ingredients

  • 800g Lamb shoulder (cubed)
  • 1 tbsp Black pepper
  • 1 tsp Cardamom
  • 2 Red onions (pureed)
  • 4 cloves Garlic
  • 1 shot Turkish Coffee
  • 200ml Lamb stock
  • 1 tbsp Honey

Cooking Method

  1. The Scorch Sear lamb cubes until dark and rock-hard charred; remove.
  2. The Architect Fry onion puree and garlic until sweet and dark.
  3. The Bloom Add spices and coffee to the pan; the sudden steam will release the roasted bean oils.
  4. The Swell Add honey and stock; return meat. Simmer covered for 45 minutes.
  5. The Marriage Remove lid; boil until the liquid is a thick, black-mahogany silk.
  6. The Final Flourish Top with raw fresh mint matchsticks and extra pepper.
