Ingredients
- 2 Sirloin steaks
- 1 shot Strong Espresso
- 100ml Double cream
- 1 tsp Black pepper
- 1 tsp Garlic powder
- 50g Butter
- 1 tbsp Mustard
Cooking Method
- The Scorch Sear steaks in 1 tbsp oil on white-hot heat for 3 minutes per side until charred; remove.
- The Bloom Whisk coffee and spices in the hot pan; the sudden steam will release the roasted bean oils.
- The Silk Merge Add mustard and cream; simmer for 2 minutes until it reduces to a thick, dark brown silk.
- The Marriage Whisk in butter off the heat for gloss; return steaks for 30 seconds.
- The Final Flourish Top with raw fresh chives and extra black pepper.
