(Our Play on Coffee-Rubbed Balkan Beef)
Ingredients: 2 Ribeye steaks, 1 tbsp Fine Turkish Coffee, 1 tsp Smoked paprika, 1 tsp Salt, 2 cloves Garlic (minced), 50g Butter, 2 tbsp Honey, 1 tbsp Balsamic vinegar...
Ingredients
- 2 Ribeye steaks
- 1 tbsp Fine Turkish Coffee
- 1 tsp Smoked paprika
- 1 tsp Salt
- 2 cloves Garlic (minced)
- 50g Butter
- 2 tbsp Honey
- 1 tbsp Balsamic vinegar
Cooking Method
- The Coat Rub the dry coffee-spice mix into the raw meat slabs.
- The Scorch Sear in oil on white-hot heat for 3 minutes per side until the coffee chars into a black crust.
- The Bloom Add butter and garlic to the pan; whisk in honey and vinegar with a tiny 10ml splash of water.
- The Marriage Drench the hot charred steaks in the dark honey-silk.
- The Final Flourish Finish with raw sea salt and fresh raw thyme.
