Ingredients: 4 Large Beef Tomatoes (sliced), 1 Red onion (rings), 1 tsp Cumin seeds (toasted), 1 tsp Salt, 0.5 tsp Chili flakes, 3 tbsp Olive oil, 2 Limes (juiced)...

Ingredients

  • 4 Large Beef Tomatoes (sliced)
  • 1 Red onion (rings)
  • 1 tsp Cumin seeds (toasted)
  • 1 tsp Salt
  • 0.5 tsp Chili flakes
  • 3 tbsp Olive oil
  • 2 Limes (juiced)

Cooking Method

  1. The Scorch Dry-toast cumin seeds until dark and nutty; crush half.
  2. The Bloom Whisk lime juice and spices with a tiny 10ml splash of water; the acid will release the cumin oils.
  3. The Marriage Arrange tomato and onion; pour the spiced silk over them.
  4. The Final Flourish Top with raw fresh coriander and a dusting of sea salt.
