THE CUMIN MEAT-ORBS
(Our Play on Izmir Kofte style Meatballs)
Ingredients: 500g Beef mince, 2 Potatoes (wedges), 1 Onion (pureed), 2 cloves Garlic, 1 tbsp Cumin, 1 tsp Smoked paprika, 1 tsp Black pepper, 300ml Tomato passata, 1 tbsp Honey...

- 500g Beef mince
- 2 Potatoes (wedges)
- 1 Onion (pureed)
- 2 cloves Garlic
- 1 tbsp Cumin
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 300ml Tomato passata
- 1 tbsp Honey
Cooking Method
- The Build Knead meat, onion, and spices together.
- The Scorch Fry orbs and potato wedges in oil on high heat until charred and rock-hard; remove.
- The Bloom Add garlic and a 30ml splash of stock to the pan; the hiss will release the cumin perfume.
- The Swell Add passata and honey; return meat and potatoes. Simmer covered for 15 minutes.
- The Final Flourish Top with raw fresh parsley and extra black pepper.
