THE CUMIN-CRUSTED BEEF
(Our Play on Kerala Beef Fry)
Ingredients: 600g Beef (cubed), 1 tsp Black pepper, 2 Red onions (sliced), 20g Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Garam masala, 1 tsp Chili powder, 50g Coconut slices, 10 Curry leaves, 3 tbsp Coconut oil...
Ingredients
- 600g Beef (cubed)
- 1 tsp Black pepper
- 2 Red onions (sliced)
- 20g Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Garam masala
- 1 tsp Chili powder
- 50g Coconut slices
- 10 Curry leaves
- 3 tbsp Coconut oil
Cooking Method
- The Boil Pressure cook or simmer beef with pepper and turmeric until tender; reserve the juices.
- The Scorch In a wide pan, fry coconut slices and curry leaves in coconut oil until brown and fragrant.
- The Architect Add onions and sauté until dark golden brown.
- The Bloom Stir in the spices and a splash of beef juice to form a dark, clinging paste.
- The Marriage Toss in the beef; stir-fry on high heat until the meat is dark, dry, and crusted in spices.
