THE CUMIN-CHARRED PODS
(Our Play on Stuffed Peppers with Turkish Influence)
Ingredients: 6 Bell Peppers (tops removed), 500g Beef mince, 100g Rice (uncooked), 1 tbsp Cumin, 1 tsp Smoked paprika, 1 tsp Black pepper, 500ml Tomato passata, 200ml Beef stock, 1 tbsp Honey...

- 6 Bell Peppers (tops removed)
- 500g Beef mince
- 100g Rice (uncooked)
- 1 tbsp Cumin
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 500ml Tomato passata
- 200ml Beef stock
- 1 tbsp Honey
Cooking Method
- The Build Mix meat, rice, and spices; add a 10ml splash of stock to help the cumin bloom.
- The Marriage Stuff peppers; place in a pot with passata, remaining stock, and honey.
- The Swell Simmer covered for 40 minutes until rice is tender and peppers are lacquered.
- The Final Flourish Finish with a massive hit of raw fresh coriander matchsticks.
