THE CUMIN-CHARRED ORBS

Ingredients: 500g Lamb mince, 50g Chickpea flour (Besan), 1 Red onion (pureed), 2 cloves Garlic, 1 tbsp Cumin seeds (crushed), 1 tsp Coriander seeds, 1 tsp Salt, 2 tbsp Tahini, 1 Lemon (juiced)...

Ingredients

  • 500g Lamb mince
  • 50g Chickpea flour (Besan)
  • 1 Red onion (pureed)
  • 2 cloves Garlic
  • 1 tbsp Cumin seeds (crushed)
  • 1 tsp Coriander seeds
  • 1 tsp Salt
  • 2 tbsp Tahini
  • 1 Lemon (juiced)

Cooking Method

  1. The Build Knead meat, onion, garlic, and chickpea flour until tacky.
  2. The Bloom Whisk tahini and lemon juice with the spices and a 10ml splash of water; fold into the meat.
  3. The Scorch Form small spheres; fry in oil on maximum heat until every orb is charred and crispy outside.
  4. The Final Flourish Top with raw fresh mint matchsticks and extra raw tahini.
