THE CUMIN-CHARRED ORBS
(Our Play on Balkan Lamb Kofta with a Chickpea Twist)
Ingredients: 500g Lamb mince, 50g Chickpea flour (Besan), 1 Red onion (pureed), 2 cloves Garlic, 1 tbsp Cumin seeds (crushed), 1 tsp Coriander seeds, 1 tsp Salt, 2 tbsp Tahini, 1 Lemon (juiced)...
Ingredients
- 500g Lamb mince
- 50g Chickpea flour (Besan)
- 1 Red onion (pureed)
- 2 cloves Garlic
- 1 tbsp Cumin seeds (crushed)
- 1 tsp Coriander seeds
- 1 tsp Salt
- 2 tbsp Tahini
- 1 Lemon (juiced)
Cooking Method
- The Build Knead meat, onion, garlic, and chickpea flour until tacky.
- The Bloom Whisk tahini and lemon juice with the spices and a 10ml splash of water; fold into the meat.
- The Scorch Form small spheres; fry in oil on maximum heat until every orb is charred and crispy outside.
- The Final Flourish Top with raw fresh mint matchsticks and extra raw tahini.
