THE CUMIN-CHARRED CHIPS
(Our Play on Spiced Tortilla Chips)

Ingredients
- 6 Corn Tortillas (cut into triangles)
- 1 tsp Cumin
- 1 tsp Chili powder
- 1 tsp Salt
- 3 tbsp Vegetable oil
- 1 Lime (juiced)
Cooking Method
- The Mix Whisk oil, lime juice, and spices in a large bowl.
- The Bloom Add a tiny 5ml splash of water to the oil; the moisture will help the spices 'swell' and stick to the dry tortillas.
- The Coat Toss tortilla triangles in the spice-oil until fully coated.
- The Scorch Bake at 200°C for 8 minutes or air-fry until rock-hard and golden brown.
- The Final Flourish Top with a final dusting of raw lime zest while still hot.
