THE CRUNCHY HEAT-MEDLEY
(Our Play on Vegetable Jalfrezi)
Ingredients: 1 Cauliflower (tiny florets), 1 Carrot (batons), 100g Green beans, 1 Green pepper (sliced), 1 Red onion (petals), 2 tbsp Oil, 1 tsp Turmeric, 1 tsp Cumin powder, 1 tsp Garam Masala, 2 tbsp Tomato purée...
Ingredients

- 1 Green pepper (sliced)
- 1 Red onion (petals)
- 2 tbsp Oil
- 1 tsp Turmeric
- 1 tsp Cumin powder
- 1 tsp Garam Masala
- 2 tbsp Tomato purée
- 1 tbsp Vinegar
Cooking Method
- The Scorch Stir-fry peppers and onion petals on high heat until the edges blister.
- The Bloom In the same pan, sizzle the spices and tomato purée with a 20ml splash of water.
- The Marriage Toss all veg back into the pan; stir-fry for 5 minutes.
- The Finish Ensure the sauce is dry and clings tightly to the veg.
