Ingredients: 1L Chicken stock, 400g Tomato passata, 1 tbsp Chipotle paste, 1 tsp Cumin, 1 tsp Dried Oregano, 1 Onion (pureed), 2 cloves Garlic, 100g Fried Tortilla strips...

Ingredients

  • 1L Chicken stock
  • 400g Tomato passata
  • 1 tbsp Chipotle paste
  • 1 tsp Cumin
  • 1 tsp Dried Oregano
  • 1 Onion (pureed)
  • 2 cloves Garlic
  • 100g Fried Tortilla strips

Cooking Method

  1. The Architect Fry onion puree and garlic until sweet and golden.
  2. The Bloom Add chipotle and spices with a 30ml splash of stock; fry until the smoky oil separates.
  3. The Swell Add passata and remaining stock; simmer for 10 minutes until the mist is thick.
  4. The Assembly Place tortilla strips and shredded chicken in a bowl; pour the boiling mist over them.
  5. The Final Flourish Top with raw avocado, sour cream, and a hit of raw fresh coriander.
