THE CRUNCH-MIST BOWL
(Our Play on Sopa de Tortilla)
Ingredients: 1L Chicken stock, 400g Tomato passata, 1 tbsp Chipotle paste, 1 tsp Cumin, 1 tsp Dried Oregano, 1 Onion (pureed), 2 cloves Garlic, 100g Fried Tortilla strips...
Ingredients
- 1L Chicken stock
- 400g Tomato passata
- 1 tbsp Chipotle paste
- 1 tsp Cumin
- 1 tsp Dried Oregano
- 1 Onion (pureed)
- 2 cloves Garlic
- 100g Fried Tortilla strips
Cooking Method
- The Architect Fry onion puree and garlic until sweet and golden.
- The Bloom Add chipotle and spices with a 30ml splash of stock; fry until the smoky oil separates.
- The Swell Add passata and remaining stock; simmer for 10 minutes until the mist is thick.
- The Assembly Place tortilla strips and shredded chicken in a bowl; pour the boiling mist over them.
- The Final Flourish Top with raw avocado, sour cream, and a hit of raw fresh coriander.
