Ingredients
- 300g Carolino rice
- 500g Fresh Clams
- 100g Chouriço (diced)
- 1 tsp Smoked paprika
- 1 tsp Turmeric
- 800ml Fish stock
- 200g Tomato passata
Cooking Method
- The Scorch Fry chouriço until charred; remove. Sauté rice in the fat until translucent.
- The Bloom Add spices and passata with a 40ml splash of stock; the hiss will release the smoky aromatics.
- The Swell Add remaining stock; simmer uncovered until the rice is half-cooked.
- The Marriage Toss in clams and return chouriço; cover for 5 minutes until shells open.
- The Final Flourish Top with a massive hit of raw fresh coriander and lemon zest.
