THE CRIMSON LEGUME
(Our Play on Rajma Masala / Kidney Bean Curry)

- 400g Kidney beans (canned and rinsed)
- 2 Red onions (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Chili powder
- 2 tsp Coriander powder
- 200g Tomato passata
- 100ml Water
Cooking Method
- The Architect Fry onions for 12 minutes until they are a dark, jammy brown.
- The Bloom Add spices and a 30ml splash of water to create a thick, dark masala base.
- The Simmer Add beans, passata, and water; simmer uncovered for 15 minutes until the sauce is thick.
- The Mash Crush a few beans against the pot to release starch and thicken the gravy into a rich velvet.
- The Final Flourish Top with a knob of butter and a massive hit of fresh coriander.
