THE CRIMSON KALE-MIST
(Our Play on Spanish Kale and Chorizo Soup)
Ingredients: 300g Kale, 400g Cannellini beans, 100g Chorizo (diced), 2 Red onions (diced), 1 Carrot (minced), 2 tsp Smoked paprika, 1 tsp Chili flakes, 400g Tomato passata, 500ml Veg stock...

- 300g Kale
- 400g Cannellini beans
- 100g Chorizo (diced)
- 2 Red onions (diced)
- 1 Carrot (minced)
- 2 tsp Smoked paprika
- 1 tsp Chili flakes
- 400g Tomato passata
- 500ml Veg stock
Cooking Method
- The Scorch Fry chorizo until the fat renders and it turns crispy.
- The Architect Add onions and carrots; sauté in the red fat until soft.
- The Bloom Add paprika and chili with a 30ml splash of stock to release the smoky oils.
- The Swell Add passata, remaining stock, and beans; simmer for 10 minutes until thickened.
- The Marriage Toss in the kale; simmer for 5 minutes until wilted into the crimson silk.
- The Final Flourish Top with raw extra virgin olive oil and manchego.
