Ingredients: 300g Kale, 400g Cannellini beans, 100g Chorizo (diced), 2 Red onions (diced), 1 Carrot (minced), 2 tsp Smoked paprika, 1 tsp Chili flakes, 400g Tomato passata, 500ml Veg stock...

Ingredients

  • 300g Kale
  • 400g Cannellini beans
  • 100g Chorizo (diced)
  • 2 Red onions (diced)
  • 1 Carrot (minced)
  • 2 tsp Smoked paprika
  • 1 tsp Chili flakes
  • 400g Tomato passata
  • 500ml Veg stock

Cooking Method

  1. The Scorch Fry chorizo until the fat renders and it turns crispy.
  2. The Architect Add onions and carrots; sauté in the red fat until soft.
  3. The Bloom Add paprika and chili with a 30ml splash of stock to release the smoky oils.
  4. The Swell Add passata, remaining stock, and beans; simmer for 10 minutes until thickened.
  5. The Marriage Toss in the kale; simmer for 5 minutes until wilted into the crimson silk.
  6. The Final Flourish Top with raw extra virgin olive oil and manchego.
