- 2 Shallots (minced)
- 1 clove Garlic (minced)
- 50g Butter
- 1 tsp White pepper
- 1 tsp Salt
- 100ml Dry White Wine
- 100ml Double cream
- 1 Egg yolk
Cooking Method
- The Architect Sauté shallots and garlic in butter until soft.
- The Bloom Add white pepper and a 20ml splash of wine; the steam will release the aromatics.
- The Marriage Add mussels and remaining wine; cover and cook for 5 minutes until open.
- The Silk Merge Whisk cream and egg yolk together; slowly stir into the pan off the heat until it forms a thick ivory silk.
- The Final Flourish Top with raw fresh chives and extra lemon zest.
