Ingredients: 1 Red onion (finely diced), 3 cloves Garlic, 400g Tomato passata, 100g Mascarpone, 1 tsp Dried Oregano, 1 tsp Chili flakes, 1 tsp Sugar, 200g Penne or Fusilli...

  • 1 Red onion (finely diced)
  • 3 cloves Garlic
  • 400g Tomato passata
  • 100g Mascarpone
  • 1 tsp Dried Oregano
  • 1 tsp Chili flakes
  • 1 tsp Sugar
  • 200g Penne or Fusilli

Cooking Method

  1. The Architect Sauté onions and garlic in olive oil until sweet and golden.
  2. The Bloom Add spices and sugar with a 30ml splash of water to form a dark, bubbling fire-paste.
  3. The Swell Add passata; simmer for 8 minutes until thickened.
  4. The Marriage Stir in the mascarpone until it melts into a thick pink silk; toss with pasta.
  5. The Final Flourish Top with a massive hit of raw fresh basil matchsticks.
